Mushroom & Herb Frittata

This Mushroom & Herb Frittata is one of my favorite meals to make when I want something simple, nourishing, and packed with flavor. Everything comes together in one pan, making it perfect for a quick brunch, easy lunch, or meal prep for the week.

Ingredients

  • 6 large eggs

  • ¼ cup egg whites

  • Splash of milk (about 2 tablespoons)

  • 1 teaspoon Dijon mustard

  • 1 teaspoon sea salt

  • 1 tablespoon extra virgin olive oil

  • 1 medium yellow onion, diced

  • 1 (8 oz) package shiitake mushrooms, sliced

  • 1 tablespoon fresh rosemary, finely chopped

  • ¼ cup fresh parsley, chopped

  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. In a large nonstick skillet, heat the olive oil over medium heat.

  2. Add the diced onion and sauté for 4–5 minutes, until softened and translucent.

  3. Stir in the sliced shiitake mushrooms and cook until they release their moisture and begin to brown, about 5–7 minutes.

  4. Add the chopped rosemary and parsley, stirring for about 30 seconds until fragrant.

  5. In a large bowl, whisk together the eggs, egg whites, milk, Dijon mustard, and sea salt until smooth.

  6. Pour the egg mixture evenly over the vegetables. Reduce the heat to medium-low, cover the skillet, and cook for about 3 minutes, or until the eggs begin to set.

  7. Sprinkle the grated Parmesan evenly over the top. Cover again and continue cooking for another 2–4 minutes, or until the cheese has melted and the eggs are fully set.

  8. Remove from the heat and let the frittata rest for 2–3 minutes before slicing into wedges and serving.

  • A simple green salad

  • Roasted sweet potatoes

  • Sourdough toast for a heartier meal

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. Enjoy cold or reheat gently in the microwave or a skillet.
