The BEST Date Brownies

These naturally sweetened, grain-free, and dairy-free brownies are rich, fudgy, and completely irresistible. Sweetened with dates and loaded with wholesome ingredients, they're a treat you can feel good about!


Ingredients

13 oz pitted dates (about 2.5 cups) – naturally sweet and fiber-rich

2 flax eggs – a plant-based egg substitute packed with omega-3s

2 tsp vanilla extract – for a warm, aromatic flavor

1/2 cup avocado oil – adds moisture and healthy fats

2/3 cup unsweetened cocoa powder – rich in antioxidants and chocolatey goodness

1/4 cup coconut flour – grain-free and nutrient-dense

1/4 tsp salt – enhances the sweetness

1 tsp baking soda alternative – helps the brownies rise

1/3 cup HU chocolate chips – optional but recommended for melty chocolate pockets


Instructions

Soak the Dates:

Place the pitted dates in a bowl and cover with hot water. Let them soak for 15 minutes to soften.


Make the Flax Eggs:

For each flax egg, mix 1 tbsp ground flaxseed with 3 tbsp water. Let the mixture sit for 5 minutes until it forms a gel-like consistency. Make the flax eggs separately for the best texture.


Blend the Wet Ingredients:

Drain the dates, reserving 1/4 cup of the soaking water.

In a high-speed blender or food processor, blend the softened dates with the flax eggs, avocado oil, and vanilla extract until smooth.


Add the Dry Ingredients:

To the date mixture, add cocoa powder, coconut flour, salt, and baking soda. Blend until a thick, smooth batter forms. Fold in the HU chocolate chips if using.


Bake the Brownies:

Preheat your oven to 325°F (165°C). Line an 8x8-inch baking pan with parchment paper.

Spread the batter evenly into the prepared pan.

Bake for 23 minutes, or until the edges are set and the center is slightly soft.


Cool and Enjoy:

Remove from the oven and let the brownies cool completely in the pan before slicing. This helps them firm up for the perfect fudgy texture.

  • Date prep: Use Medjool dates for their natural caramel-like sweetness. If your dates are dry, soak them longer or use an additional tablespoon of water.
