Strawberry Chia Jam (Paleo & Vegan)

A naturally sweet, zesty jam thickened with chia seeds, no refined sugar, no pectin!
Ingredients
2 lbs strawberries, washed and chopped
1/4 cup agave syrup (or sub with honey/maple for paleo)
Zest of 1 lime
Juice of 1 lime
1/4 cup chia seeds
Instructions
Add strawberries, agave syrup, lime zest, and juice to a large saucepan.
Stir and bring to a boil over medium heat.
Lower heat to medium-low and mash with a potato masher as the strawberries soften.
Simmer for 10–15 minutes, stirring frequently, until thickened.
Stir in chia seeds and cook for 2 more minutes.
Remove from heat and let cool completely.
Transfer to mason jars and store in the fridge for up to 2 weeks.
Serve With: Grain-free toast, coconut yogurt, or spooned over your favorite breakfast bowl.
