Grilled Branzino with "Papas a la Provenzal" & Seasonal Veggies

A Mediterranean-inspired meal rich in omega-3s, antioxidants, and vibrant flavors. This dish balances crispy-skinned branzino, golden potatoes tossed in fresh herbs, and smoky grilled vegetables that nourish both your body and mind.


Ingredients

Grilled Branzino

  • 2 whole branzino (gutted and scaled)

  • 1 bunch fresh parsley

  • 1 lemon

  • 2 garlic cloves, minced

  • Fresh herbs: rosemary, oregano, or thyme

  • Sea salt, to taste

  • Avocado oil (or extra virgin olive oil)

Papas a la Provenzal (Garlic-Parsley Potatoes)

  • 1 lb yellow potatoes

  • 3 garlic cloves, minced

  • 1 cup fresh parsley, chopped

  • Extra virgin olive oil

  • Sea salt, to taste

Grilled Vegetables

  • 2 zucchinis

  • 1 eggplant

  • 3 bell peppers (red, yellow, green, or orange)

  • 2 onions

  • Extra virgin olive oil

  • Sea salt


Process

1. Prepare the Branzino

Choose your style:

 • Whole: Stuff the fish cavity with herbs and lemon slices.

 • Butterflied: Remove head, tail, the spine and bones, then fill with herbs and lemon; secure with kitchen twine.

Brush both sides with avocado oil and sprinkle with sea salt.


Preheat grill 20 minutes on high (a hot grill prevents sticking)

  • Grill 6–8 minutes per side until skin is crisp and flesh turns white and flakes easily.


For the herb sauce, mix chopped parsley, garlic, lemon juice, EVOO, and salt. Spoon over the grilled fish before serving.


2. Make the Papas a la Provenzal (Potatoes with garlic and parsley)

  • Peel and cube the potatoes (about 1 inch).

  • Boil until tender, then drain and plunge into ice water to stop cooking.

  • In a bowl, combine parsley, garlic, EVOO, and salt.

  • Toss potatoes in the herb mixture. Serve warm or chilled, both are delicious!


3. Grill or Roast the Vegetables

  • Slice zucchini and eggplant; sprinkle with salt and rest 10 minutes to draw out moisture. Pat dry, drizzle with EVOO, and season.

  • Slice peppers and onions; coat with EVOO and salt.

Grill option: Cook zucchini and eggplant until lightly charred.

Oven option: Roast peppers and onions at 350°F until golden and tender.
