Strawberry Syrup (Refined Sugar-Free)

Sweetened naturally with monk fruit, this syrup is perfect in matcha lattes, yogurt bowls, or drizzled over pancakes.
Ingredients
1 cup fresh strawberries, washed and chopped
1/2 tbsp pure monk fruit powder
1/2 cup water
Instructions
In a small pot, combine strawberries, monk fruit, and water.
Stir and bring to a gentle boil over medium heat.
Remove from heat and blend using an immersion blender (or transfer to a high-speed blender).
Strain through a fine-mesh sieve for a smooth syrup.
Let cool, then store in a glass jar in the fridge
Use It In: Matcha lattes, chia pudding, oatmeal, or drizzle over banana bread.
