Savory Herby Greek Yogurt Breakfast Bowl

A fresh, savory twist on the classic yogurt bowl. Creamy Greek yogurt, fresh herbs, jammy egg, and crispy sourdough come together for a quick, protein-rich breakfast that feels elevated but takes less than 15 minutes to make.

Ingredients

  • ¾ cup plain Greek yogurt

  • ¼ cup fresh parsley and cilantro, finely chopped

  • Sea salt and freshly cracked black pepper, to taste

  • 1 large pasture-raised organic egg

  • 1 slice sourdough bread

  • Extra-virgin olive oil (measured with the heart)

  • Optional: microgreens and flaky sea salt for topping


Process

  1. Make the jammy egg. Bring a small pot of water to a boil. Gently lower in the egg and cook for 7 minutes. Transfer to cold water, then peel.

  2. Make the herby yogurt. Add the Greek yogurt, chopped parsley and cilantro, salt, pepper, and a drizzle of extra-virgin olive oil to a bowl. Mix until combined.

  3. Toast the sourdough. Heat a small drizzle of olive oil in a pan and toast the sourdough on both sides until golden and crisp. Cut into pieces for dipping.

  4. Assemble. Top the herby yogurt with the halved jammy egg and sourdough. Finish with microgreens, flaky sea salt, cracked pepper, and another little drizzle of EVOO.


This is one of those breakfasts that proves simple doesn't have to mean boring. Greek yogurt and egg provide protein, while the sourdough adds satisfying carbohydrates and EVOO brings healthy fats and richness. The fresh herbs make the whole bowl bright and flavorful without needing a long ingredient list.
