Paleo Chocolate Chip Cookies

Makes: 12–14 cookies

Bake Time: 9 minutes
Ingredients:
⅓ cup coconut butter, softened
¾ cup coconut sugar
1 large egg
1 teaspoon almond milk
1 teaspoon vanilla extract
½ teaspoon baking soda
½ teaspoon fine sea salt
2 cups blanched almond flour
¾ cup Hu chocolate chips (or any paleo-friendly dark chocolate)
Flaky sea salt for topping
Instructions:
Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together coconut butter and coconut sugar until light and fluffy.
Add the egg, almond milk, and vanilla extract. Mix until well combined.
Add almond flour, baking soda, and salt. Stir to combine.
Fold in the chocolate chips.
Scoop about 3 tablespoons of dough per cookie onto the prepared baking sheet.
Bake for 9 minutes or until edges are lightly golden.
Sprinkle flaky sea salt on top immediately after removing from the oven. Let cool before serving.
