Paleo Chocolate Cake

A rich and indulgent grain-free, dairy-free, refined sugar-free chocolate cake—perfect for a balanced lifestyle!
Ingredients
Cake:
¾ cup virgin coconut oil, melted and cooled
1 ¾ cup coconut sugar
4 pasture-raised eggs
1 cup unsweetened almond milk
1 tablespoon pure vanilla extract
1 tablespoon apple cider vinegar
1 cup coconut flour
¾ cup unsweetened cocoa powder
2 teaspoons baking soda
½ teaspoon sea salt
Chocolate Frosting:
1 ½ cups Hu chocolate chips
1 can coconut cream, chilled overnight
1 teaspoon coconut oil
Instructions
1. Prepare the Cake Batter
Preheat oven to 350°F (175°C). Line a 9-inch round cake pan with parchment paper and lightly grease with avocado oil.
In a large bowl, whisk together coconut sugar, melted coconut oil, eggs, almond milk, vanilla extract, and apple cider vinegar until smooth.
Gradually sift in coconut flour, cocoa powder, baking soda, and salt. Stir until fully combined, ensuring no lumps remain.
2. Bake the Cake
Pour the batter into the prepared cake pan and smooth out the top.
Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely before frosting.
3. Make the Chocolate Frosting
Melt Hu chocolate chips with coconut oil in a double boiler (or microwave in short 15-second bursts, stirring in between).
In a separate bowl, whip the chilled coconut cream until fluffy.
Fold the melted chocolate into the whipped coconut cream and whisk until smooth. Refrigerate for 30 minutes to firm up before frosting.
4. Assemble & Frost the Cake
Once the cake is completely cool, cut it in half horizontally to create two layers.
Spread a generous layer of frosting between the layers, then frost the entire cake.
Decorate as desired—shaved chocolate, cacao nibs, or fresh berries make great toppings!
