Oven-Baked Lemon Chicken

Ingredients
8 bone-in, skin-on chicken thighs (organic, pasture-raised)
1/3 cup extra virgin olive oil
1/4 cup fresh lemon juice
4 garlic cloves, minced
1 tbsp dried oregano
2 tsp dried thyme
2 tsp Dijon mustard
2 tsp sea salt
1 tsp black pepper
Instructions
Preheat your oven to 350°F (175°C).
In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, mustard, salt, and pepper.
Pour marinade over chicken thighs and let them sit for at least 15–30 minutes (or up to overnight in the fridge).
Transfer the chicken to a baking dish and bake uncovered for 45 minutes.
For a crispy finish, broil on high for 2–3 minutes until golden brown.
Let rest for 5 minutes before serving.
