High Protein Gluten Free Air Fryer Cinnamon Date Rolls

Soft, warm cinnamon rolls made with oat flour, Greek yogurt, and a naturally sweet cinnamon-date filling. This simplified version requires no yeast, baking powder, or baking soda and comes together quickly in the air fryer—perfect for when you want something cozy without making a full batch of traditional cinnamon rolls.

Ingredients
For the dough
1 cup oat flour
⅔ cup plain Greek yogurt, added gradually
½ tsp vanilla extract
Pinch of sea salt
1 tsp pure maple syrup, optional
For the cinnamon-date filling
5–6 Medjool dates, pitted
1–1½ tsp cinnamon
½ tsp vanilla extract
Pinch of sea salt
1–2 tbsp hot water, as needed
For the yogurt cream cheese glaze
2 tbsp plain Greek yogurt
1 tbsp softened cream cheese
1–2 tsp pure maple syrup
Splash of vanilla extract
Pinch of sea salt
Process
1. Make the dough. Combine the oat flour and salt. Add the Greek yogurt gradually, along with the vanilla and optional maple syrup. Mix until a soft dough forms. Let it rest for 5–10 minutes to allow the oat flour to absorb the moisture.
If the dough feels too sticky to work with, add another tablespoon of oat flour at a time.
2. Make the filling. If your dates aren't very soft, soak them in hot water for about 5 minutes. Mash or blend the dates with cinnamon, vanilla, salt, and enough hot water to create a thick, spreadable paste.
3. Roll & fill. Place the dough between two sheets of parchment paper and gently roll into a thin rectangle. Remove the top sheet and spread the cinnamon-date mixture evenly over the dough, leaving a small border around the edges.
Carefully roll the dough into a log and slice into 5–6 rolls.
4. Air fry. Arrange the rolls close together in a small air-fryer-safe dish or on parchment paper. Air fry at 315°F for 10–12 minutes, checking around the 9-minute mark. They're ready when the outside is lightly golden and the centers are just cooked through.
5. Glaze & enjoy. Mix the glaze ingredients until creamy. Let the cinnamon rolls cool for a few minutes before spooning the glaze over the warm rolls.

These cinnamon rolls are a simple way to turn a traditionally rich treat into something a little more balanced without trying to make dessert “perfect.”
Oat flour provides whole-grain carbohydrates and fiber, while Greek yogurt adds protein and gives the dough its soft texture. Instead of a traditional butter-and-sugar filling, Medjool dates provide natural sweetness along with their characteristic caramel flavor.
Pair a couple of rolls with eggs, Greek yogurt, or another protein source for a more complete and satisfying breakfast.
Tip: Because this dough doesn't contain yeast or a chemical leavener, these won't have the tall, fluffy texture of traditional cinnamon rolls. Think soft, slightly chewy cinnamon-date rolls and be careful not to overcook them, as oat flour can dry out quickly.
