A guilt-free twist on the classic French dessert! This grain-free, refined-sugar-free tart combines caramelized apples with a nutty, golden crust for a wholesome treat that's as indulgent as it is nourishing.
Ingredients
For the Crust:
2 cups (225g) almond flour (or coconut flour) – nutrient-dense and grain-free
1/2 cup (70g) arrowroot starch – adds structure and lightness
1/4 cup (90g) maple syrup – a natural, unrefined sweetener
Pinch of salt – enhances flavor
3–4 tbsp water – to bind the dough
For the Caramelized Apples:
2 lbs apples (about 6 small Fujis or your favorite variety) – fiber-rich and naturally sweet
1/2 cup coconut cream – adds richness and a hint of tropical flavor
1/2 cup apple juice – enhances the apple flavor naturally
1/4 cup maple syrup – for a touch of caramel-like sweetness
1 tsp vanilla extract – for warm, aromatic notes
Dash of cinnamon (optional) – adds a cozy, spiced flavor
Instructions
Make the Crust:
In a large mixing bowl, combine almond flour, arrowroot starch, salt, and maple syrup. Gradually add water, mixing until the dough forms a sticky ball.
Place the dough on a sheet of parchment paper and roll or press it into a circle the size of your pan. Set aside while preparing the apples.
Prepare the Apples:
Peel, core, and quarter the apples.
In a tart tatin dish (or large saucepan), combine the coconut cream, apple juice, maple syrup, and vanilla extract. Bring the mixture to a gentle simmer over medium heat.
Add the apples and cook, stirring occasionally, for 20-25 minutes, or until the apples are tender and the caramel sauce is thickened. Remove from heat.
Assemble the Tart:
If using a tart tatin dish: Gently place the crust over the caramelized apples, pressing it down to fit snugly.
If using a cake pan: Lightly grease the pan and arrange the caramelized apples in the bottom, rounded side down. Place the crust on top, pressing it into place.
Bake:
Preheat the oven to 400°F (200°C). Bake the tart for 25 minutes, or until the crust is golden and firm.
Flip and Serve:
Allow the tart to cool for 10 minutes before carefully inverting it onto a serving plate to reveal the beautifully caramelized apples.
Pro Tips for Success:
Apple choice: Fuji, Honeycrisp, or Pink Lady apples work best for their balance of sweetness and firmness.
Storage: This tart keeps well in the fridge for up to 3 days. Gently reheat before serving.

This Healthy Tart Tatin is perfect for holidays, dinner parties, or simply treating yourself while staying aligned with your health goals. A stunning dessert that's as good for your body as it is for your taste buds!
