French Chicken Fricassee

Ingredients
5 Chicken Thighs
4 clove Garlic
1 Onion
2 cups Mushroom
1/2 tbsp arrowroot starch (Optional)
1 can coconut milk
Bag of Potatoes
Fresh herbs
EVOO
Salt and pepper to taste
Process
Clean, peel and cut the potatoes and put them to boil until soft. Once soft, drain water and return to pot with salt, pepper, and 1/2 cup coconut milk. Mash until creamy.
Marinate the chicken with salt, pepper, fresh herbs, and olive oil. Cook chicken in a pan on medium heat until golden.
Remove chicken and on the same pan add chopped onion, garlic and sauté until translucent. Add mushrooms, salt, fresh herbs, and coconut milk (add arrowroot starch if too watery).
Assemble the mashed potatoes, with the chicken and the creamy mushroom sauce on top, enjoy!
