Cinnamon Date Cake (Gluten-Free, Naturally Sweetened)

A soft, warmly spiced cake made with whole ingredients and naturally sweetened with dates and maple syrup. Perfect for a cozy breakfast, dessert, or afternoon treat.
Ingredients
Cake Batter
12–14 pitted dates
1 cup boiling water
3 organic, pasture-raised eggs
1/2 cup pure maple syrup
1 tsp vanilla extract
1/4 cup extra virgin olive oil
1/2 cup coconut flour
1/2 cup cassava flour
1 tbsp arrowroot powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
Cinnamon Crumble
1 tsp ground cinnamon
1/3 cup coconut sugar
1 tbsp melted coconut oil
Optional: crushed walnuts or pecans
Instructions:
Preheat oven to 350°F (175°C) and lightly grease a baking dish with avocado oil.
Soften the dates by pouring boiling water over them. Let sit for 15 minutes, then blend until smooth to create a thick paste.
Mix wet ingredients in a large bowl: eggs, maple syrup, vanilla, olive oil, and the blended date mixture.
Add dry ingredients: coconut flour, cassava flour, arrowroot powder, baking powder, baking soda, salt, and cinnamon. Mix until fully combined into a smooth batter.
Pour batter into the prepared baking dish.
Prepare the crumble by mixing coconut sugar, cinnamon, melted coconut oil, and optional nuts. Sprinkle evenly over the batter.
Bake for 28–32 minutes, depending on texture preference. For a gooey cake bake for 28min.
Cool slightly, then serve warm.
Serving Suggestion
Serve with fresh strawberries and a scoop of vanilla ice cream (or coconut milk ice cream for a dairy-free option)
